Draft Decree on the Classification, Characteristics, and Ethanol Content of Marketed Sauces

This draft decree is concerned with names and characteristics of marketed sauces. This decree drawn up by ONSSA aims essentially to:


- Define the products that are part of emulsified sauces (mayonnaise, mayonnaise sauce, salad dressing, etc.) as well as the products that are part of non-emulsified sauces (Ketchup, Soy sauce, mustard, Dijon mustard, old-fashioned mustard, sweet mustard, hot sauce, Harissa, tomato sauce, etc.).


- Establish the physicochemical characteristics of commercial sauces.


-Fix the ethanol content due to fermentation or as a flavor carrier which must not exceed 0.5% (v/v) in marketed sauces.
