This Moroccan ministerial decision (No. 356.25), published in April 2025, defines the official names, categories, and composition standards for sauces marketed in Morocco. It classifies sauces into emulsified (like mayonnaise) and non-emulsified (like ketchup and soy sauce), and sets detailed requirements for ingredients, preparation methods, and nutritional content for each type. The regulation also permits the addition of specific ingredients, such as sugars, spices, and dairy, and allows a small amount of ethanol for flavor purposes. It will come into effect six months after publication, with a transition period for selling existing stock.
